-3 ripe sliced to 1/4 inch: Bananas
-1 tbsp of Lemon Juice
-1/2 cup of White Sugar, plus another 2 tbsp of White Sugar
-1/3 cup of all-purpose Four
-1/4 tsp Kosher Salt
-4 large Eggs
-2 cups Half-and-Half
-1/2 tsp of Vanilla Extract
-1 pinch of Cream of Tartar
Preheat oven to 400º
In a separate, smaller bowl, toss the banana slices in the lemon juice and set aside.
In a medium sauce pan, combine 1/2 cup of sugar, flour and salt. Add in the egg yolks only. Whisk together.
Slowly add in the half-and-half and whisk to combine.
Heat to medium heat and continue stirring.
Once it has thickened and starts bubbling a tiny bit, take it off the heat and add in the vanilla extract.
